  • ½ Cup pumpkin puree
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to wet ingredients until just mixed; do not overmix.
  6. Fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  7. Scoop tablespoon-sized dough balls onto the prepared baking sheet, spacing them about two inches apart.
  8. Press extra marshmallows and chocolate chips on top if desired.
  9. Bake for 12 to 14 minutes or until edges are golden but centers remain soft.
  10. Allow cookies to cool briefly on the baking sheet before transferring them to a wire rack.
