  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1 tablespoon fresh basil (sliced)
  • 1 teaspoon herbs de Provence
  • 1 medium sweet onion (sliced)
  • 1 large zucchini (sliced)
  • 1 large Japanese eggplant (sliced)
  • 3 large tomatoes (sliced)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a bowl, mix crushed tomatoes, olive oil, apple cider vinegar, garlic, basil, herbs de Provence, salt, pepper, and chili powder.
  3. Pour the tomato mixture into the prepared baking dish.
  4. Layer the sliced vegetables alternately in the dish.
  5. Optionally brush vegetable tops with olive oil for browning.
  6. Bake for about one hour until the veggies are tender and bubbling.
