  • 1 ½ cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk

  • 4 oz cream cheese (for dipping sauce)
  • ½ cup powdered sugar (for dipping sauce)

Instructions

  1. Soak pineapple rings in dark and coconut rum for at least 1 hour. Drain and pat dry.
  2. Set up breading stations: place flour in one shallow bowl, coconut flakes in another, and whisk together eggs and coconut milk in a third.
  3. Bread each pineapple ring by coating it in flour, then egg mixture, followed by pressing into coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C) and fry the coated pineapple rings until golden brown on both sides (about 1 minute per side).
  5. For the dipping sauce, mix softened cream cheese with powdered sugar and reserved rum until smooth.
