  • 1 large shallot (finely diced)
  • 2 cloves garlic (finely minced)
  • 2 Tablespoons avocado oil
  • 1 teaspoon red chili flakes
  • 1 teaspoon gochugaru
  • 11 1/2 Tablespoons soy sauce
  • 1 Tablespoon dark soy sauce
  • 1/2 Tablespoon black vinegar
  • 1/2 Tablespoon brown sugar

Instructions

  1. Cook noodles in boiling water according to package instructions (5-12 minutes). Drain and set aside.
  2. While cooking, heat avocado oil in a saucepan over medium heat. Add diced shallots and minced garlic; sauté for 2–3 minutes until soft.
  3. Stir in red chili flakes and gochugaru; sauté for another 30 seconds.
  4. Turn off the heat and mix in soy sauces, black vinegar, and brown sugar; stir well.
  5. Toss cooked noodles with the sauce until evenly coated.
