  • 3 bell peppers (green, yellow, red)
  • 1 yellow onion
  • 2 cloves garlic
  • 3 tablespoons vegetable oil
  • Juice of 1 lime
  • 1/4 cup fresh cilantro (chopped)
  • 810 small flour tortillas
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper

Instructions

  1. Preheat oven to 425°F. Lightly grease a large sheet pan.
  2. Slice chicken and vegetables into strips. Arrange vegetables on the pan and place chicken on top.
  3. In a bowl, mix seasoning ingredients and sprinkle over chicken and veggies. Add minced garlic and drizzle with oil; toss to combine.
  4. Roast for 15–20 minutes until the chicken reaches an internal temperature of 165°F.
  5. Warm tortillas in foil during the last 5 minutes of cooking.
  6. Serve warm topped with lime juice and chopped cilantro.
