  • 4 fillets of salmon
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • 1 pound fresh asparagus, trimmed
  • 1 cup shredded cheese (your choice)
  • Salt and pepper to taste
  • 2 pounds baby potatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons fresh herbs (like rosemary or thyme)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, smoked paprika, garlic powder, onion powder, and salt. Brush this mixture on both sides of each salmon fillet.
  3. On a baking sheet, toss halved baby potatoes with minced garlic, fresh herbs, olive oil, salt, and pepper. Spread evenly on one side of the baking sheet.
  4. Place the seasoned salmon fillets on the other side of the baking sheet.
  5. Roast in the preheated oven for about 20 minutes until salmon is cooked through and potatoes are tender.
  6. While roasting, steam or boil asparagus until tender but crisp. Remove from heat and sprinkle shredded cheese over hot asparagus until melted.
