  • 1 lb yellow potatoes
  • 1 red onion
  • 1 jalapeño
  • 1 green bell pepper
  • 4 cups kale
  • 1/2 cup tahini
  • 2 tbsp red apple vinegar
  • 2 tbsp yellow mustard
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • salt & pepper to taste
  • lemon juice to taste
  • 1 tsp oregano
  • 1/2 tsp garlic salt
  • water as needed

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine diced potatoes, half of the red onion, jalapeño, green bell pepper, olive oil, paprika, chili powder, salt, and pepper. Mix well.
  3. Spread the vegetable mixture on the baking sheet and roast for about 30 minutes or until crispy.
  4. While vegetables are roasting, whisk together tahini, red apple vinegar, yellow mustard, lemon juice, oregano, garlic salt, and water in a separate bowl. Adjust seasoning if needed.
  5. In another bowl, massage chopped kale with lemon juice until softened.
  6. Assemble bowls starting with kale at the base followed by roasted veggies and drizzle generously with dressing before serving.
