  • 3 tablespoons lemon juice

  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 385°F.
  2. Line a baking sheet with parchment paper.
  3. Wash the mini potatoes thoroughly and set aside to dry.
  4. In a bowl with cold water and 2 tablespoons of lemon juice, carve skull faces into each potato. Soak finished potatoes in the lemon water.
  5. Mix olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper in a separate bowl.
  6. Drain the soaked potatoes and toss them in the seasoning mixture until evenly coated.
  7. Arrange the potatoes on the prepared baking sheet with carved faces up.
  8. Bake for about 30 minutes or until golden brown and tender when pierced.
