  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Parsley flakes for garnish

Instructions

  1. Preheat your oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Wash mini potatoes thoroughly and set aside.
  4. Mix water with lemon juice in a bowl to create lemon water.
  5. Carefully carve skull faces into each potato and place them in the lemon water immediately.
  6. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper; mix well.
  7. Drain carved potatoes from the lemon water and toss them in the seasoning mixture until evenly coated.
  8. Place seasoned potatoes face side up on the prepared baking sheet and bake for about 30 minutes or until golden and tender.
  9. Garnish with parsley flakes before serving.
