  • 1 1/2 cups dark chocolate chips
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 eggs (room temperature)
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • Candy eyes (for decoration)
  • 20 oz semi-sweet chocolate chips (for coating)
  • 1 tbsp coconut oil

Instructions

  1. Preheat your oven to 350°F and line a 9 x 9 inch cake pan with parchment paper.
  2. In a microwave-safe bowl, melt butter and 1 cup of chocolate chips together; stir until smooth.
  3. Beat eggs in a stand mixer until frothy, then mix in the melted chocolate mixture along with vanilla extract.
  4. Combine dry ingredients (flour, cocoa powder, baking powder, salt) into the wet mixture and fold in remaining chocolate chips.
  5. Spread batter evenly in the prepared pan and bake for 25–30 minutes; cool completely.
  6. Freeze brownies for about 15 minutes. Melt chocolate chips with coconut oil for coating.
  7. Dip cooled brownies into the melted chocolate, let excess drip off, then chill again.
  8. Decorate with icing and candy eyes once set.
