  • 150g sirloin or ribeye steak
  • 2 large eggs
  • Sliced avocado
  • Cup halved cherry tomatoes
  • 1 tbsp olive oil or butter
  • Salt & freshly cracked black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Pat the steak dry and season with salt and pepper. Heat olive oil in a skillet over high heat and sear the steak for 2-3 minutes on each side for medium-rare. Remove from heat, let rest for 5 minutes, then slice thinly.
  2. In the same skillet over medium heat, crack in the eggs and cook until whites are set but yolks remain runny (about 2-3 minutes).
  3. In a serving bowl, artfully arrange slices of avocado, halved cherry tomatoes, sliced steak, and sunny-side-up eggs.
  4. Garnish with chopped parsley and add more salt and pepper to taste. Serve immediately.
