  • 3 cups granulated sugar
  • 6 large eggs, room temperature
  • 3 cups cake flour, sifted
  • 2 tsp pure vanilla extract
  • 1/2 tsp salt
  • 1 cup heavy whipping cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup strawberry jam or preserves
  • 1 cup fresh chopped strawberries
  • 1 cup powdered sugar
  • 23 tbsp strawberry puree or juice
  • 1 tbsp milk (as needed for consistency)
  • Pinch of salt
  • Fresh halved strawberries (for decoration)

Instructions

  1. Preheat oven to 325°F (163°C) and grease three 8-inch cake pans.
  2. In a large bowl, cream together softened butter and cream cheese until fluffy. Gradually mix in sugar until well blended.
  3. Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
  4. Sift flour and salt together, then fold into the wet mixture until just combined.
  5. Divide batter among prepared pans and bake for 30-40 minutes, or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to racks.
