- 1 medium spaghetti squash
- 4 tsp olive oil (divided)
- Sea salt
- 1 tbsp olive oil
- 2 cloves garlic
- 1/2 lb ground beef
- 1/2 tsp sea salt
- 1/8 tsp black pepper (or more if you like it spicy)
- 1/2 cup marinara sauce
- 1 tsp Italian seasoning
- 2/3 cup ricotta cheese (whole milk or 2%)
- 1/3 cup grated parmesan cheese
- 2/3 cup mozzarella cheese (shredded, divided)
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Brush each half with olive oil and sprinkle with sea salt.
- Roast cut-side down on a baking sheet for about 35 minutes until tender.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add ground beef, season with salt and pepper, and cook until browned.
- Stir in marinara sauce and Italian seasoning; simmer for 5 minutes.
- In a mixing bowl, combine ricotta, parmesan, and half of the mozzarella.
- Once the squash is cooked, fill each half with the meat mixture followed by the cheese mixture. Top with remaining mozzarella.
- Bake again for an additional 10 minutes until cheese is melted.
