  • 1 medium spaghetti squash
  • 4 tsp olive oil (divided)
  • Sea salt
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1/2 lb ground beef
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper (or more if you like it spicy)
  • 1/2 cup marinara sauce
  • 1 tsp Italian seasoning
  • 2/3 cup ricotta cheese (whole milk or 2%)
  • 1/3 cup grated parmesan cheese
  • 2/3 cup mozzarella cheese (shredded, divided)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush each half with olive oil and sprinkle with sea salt.
  4. Roast cut-side down on a baking sheet for about 35 minutes until tender.
  5. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  6. Add ground beef, season with salt and pepper, and cook until browned.
  7. Stir in marinara sauce and Italian seasoning; simmer for 5 minutes.
  8. In a mixing bowl, combine ricotta, parmesan, and half of the mozzarella.
  9. Once the squash is cooked, fill each half with the meat mixture followed by the cheese mixture. Top with remaining mozzarella.
  10. Bake again for an additional 10 minutes until cheese is melted.
