  • 2 eggs
  • Β½ cup Carbalose flour
  • 3 tablespoons sugar-free orange marmalade
  • ΒΌ cup orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic
  • 1 tsp xanthan gum
  • 3 tablespoons oil
  • 1 tsp orange zest
  • 3 tbsp rice apple vinegar

Instructions

  1. Cut chicken into bite-sized pieces and mince garlic.
  2. Set up a dredging station with whisked eggs in one bowl and Carbalose flour mixed with xanthan gum in another.
  3. Preheat skillet over medium-high heat and add oil.
  4. Dip chicken pieces into egg mixture, then coat in Carbalose flour.
  5. Cook chicken in skillet until browned and cooked through; transfer to paper towel-lined plate.
  6. In a bowl, whisk together remaining sauce ingredients, then pour into the skillet and cook until thickened.
  7. Add cooked chicken back into the skillet, stirring to coat well with the sauce.
  8. Serve immediately over cauliflower rice or your choice of side.
