  • 3/4 pound lean ground turkey
  • 4 garlic cloves
  • 1 teaspoon chili powder
  • 1 teaspoon olive oil
  • 1 1/4 teaspoons ground cumin (divided)
  • 1/4 + 1/8 teaspoon salt
  • 1/4 + 1/8 teaspoon ground pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/4 cup canned crushed tomatoes
  • 1/4 cup grated pepper Jack cheese
  • 2 tablespoons minced flat-leaf parsley

Instructions

  1. Pierce sweet potatoes and microwave on HIGH for about 4-5 minutes per side until tender. Let cool.
  2. Cut the sweet potatoes in half, scoop out the flesh, and mash it with olive oil, cumin, salt, and pepper.
  3. In a nonstick skillet, cook ground turkey until browned. Stir in garlic, spices, and crushed tomatoes; simmer briefly.
  4. Fill potato skins with the turkey mixture, top with cheese, and broil until melted (about 30 seconds).
  5. Garnish with parsley and serve warm.
