  • 300 g white bread flour
  • 200 g plain (all-purpose) flour
  • 10 g fast action yeast
  • 50 g caster sugar
  • 120 ml aquafaba
  • 200 ml unsweetened non-dairy milk
  • 1 Tbsp vanilla extract
  • 200 g vegan butter or 160 ml olive oil

Instructions

  1. In a stand mixer, combine the white bread flour and all-purpose flour, adding yeast to one side and salt and sugar to the other.
  2. Mix in aquafaba, non-dairy milk, and vanilla until a rough dough forms. Knead until smooth.
  3. Incorporate softened vegan butter or olive oil into the dough until fully combined.
  4. Refrigerate the dough overnight in a covered bowl for the first rise.
  5. Shape the dough into a loaf or smaller portions and place in a loaf tin. Let rise until doubled.
  6. Preheat the oven to 180°C (350°F). Brush with glaze made from non-dairy milk and maple syrup before baking for about 20 minutes at high heat, then lower to cook for another 25–30 minutes.
  7. Cool before slicing.
