  • 1 Tbsp olive oil
  • 3 large garlic cloves, minced or pressed
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes
  • 2 cans (15 oz each) chickpeas
  • 1 (6oz-180 grams) large potato, diced
  • 2 cups (480 ml) low-sodium vegetable broth
  • Salt & black pepper, to taste

Instructions

  1. Blend one can of chickpeas with its liquid until smooth.
  2. In a pot, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
  3. Stir in the blended chickpeas, drained second can of chickpeas, diced potato, paprika, rosemary, thyme, chili flakes, and pepper.
  4. Pour in vegetable broth and stir; bring to a boil.
  5. Reduce heat to medium-low and simmer for 25 minutes, stirring occasionally.
  6. Adjust seasoning if needed and serve hot with a drizzle of olive oil.
