  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 bell pepper, chopped small
  • 2 medium carrots, chopped into ¼-inch pieces
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon salt
  • 15 ounce can diced tomatoes
  • 10 ounce can diced tomatoes with green chilies
  • 8 ounces elbow macaroni pasta
  • 15 ounce can black beans, rinsed and drained
  • 15 ounce can red kidney beans, rinsed and drained
  • 2 cups water
  • 2 cups shredded cheese

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add chopped onion, bell pepper, and carrots. Sauté until softened (about 6 minutes).
  2. Stir in minced garlic, chili powder, ground cumin, and salt; cook until fragrant (30 seconds).
  3. Combine diced tomatoes (both types), elbow macaroni pasta, black beans, red kidney beans, and water; mix thoroughly.
  4. Bring to a simmer over medium-high heat. Then reduce heat to low, cover, and cook for 12-15 minutes until pasta is tender.
  5. Remove from heat and stir in most of the shredded cheese; reserve some for topping. Serve hot.
